New to Pex....not to plumbing

I've been plumbing for many years but simply have not had an opportunity to use pex. I am in the middle of working on a quote to plumb a new construction house with pex. It is a 3 1/2 bath with an upstairs, main floor, and basement with bath. I would appreciate any tips at all on using pex, making connections, and pricing w/ pex versus other materials. In this area a typical house like this would price out at about $7,700 using PVC & copper. I will be doing it alone and rough guessing 14 working days....hoping I'm giving myself PLENTY OF room with the time estimate. There are a total of 14 fixtures in this home. By how much should I assume that I should reduce my quote by using PEX... or should I just keep it the same as for copper and pray that I get it... I need it pretty bad at this time.
Another question. In normal practice, do you attach the pex to copper stub outs or directly to supply stop valves?
